Crab Cakes

3 Tbsp. olive oil
1/2 med. red onion, diced
1 lb. DelicaSea premium crabmeat
1 1/2 Tbsp. prepared horseradish
1/8 cup Dijon mustard
1 1/2 Tbsp. sour cream
1 small egg, lightly beaten
Salt and freshly ground pepper
1 cups finely crushed corn chips
1/8 cup thinly sliced green onion


Heat 1 Tbs. olive oil in skillet over medium heat.
Saute onion until translucent and set aside.
In a mixing bowl, combine crab, onion mixture, horseradish, mustard, sour cream & egg.
Salt & pepper to taste.
Refrigerate covered for 1 hour Form the chilled crab mixture into 6 (2-in.) patties and dredge in the corn chips.
Heat remaining 2 Tbs. olive oil in a large skillet over medium heat and fry for 3 minutes on each side until lightly browned.

Yield: 3 servings.
